Veg Fried Rice


I'm very fond of making some thing with left over rice. So if you too are comfortable with that then do try this recipe with left over not over cooked rice. It will come out amazingly in right texture and taste. I had made this exclusively for my son who enjoyed even the vegetables in the rice. At last trick worked out.
So make this fried rice with whatever available vegetables at your home.
Ingredients:

  1. 2 cups of Rice not over cooked also in room temperature or straight from fridge but not hot steamed rice as it will spoil the texture of rice.
  2. Cabbage finely chopped 1 or may be half cup will also do.
  3. Beans chopped in circles  1/2 cup
  4. Carrot chopped : 1/2 cup
  5. Onion (I used spring onions onion)1 or 2
  6. Capsicup 1 small mediumly chopped
  7. Leaves of spring onion
  8. Garlic cloves 3- 4
  9. Oil
  10. Pepper and salt to taste

Method:
  • In a deep wok heat about 2 tablespoon of oil on a high flame.
  • Then add crushed garlic cloves and mix nicely.
  • Add sliced onions and give it a quick stir.
  • Remember to keep the flame high and not to over cook the vegetables. You have to just stir fry.
  • Next add the vegetables except chopped spring onion leaves and again just cook for a minute or so.
  • Add a little salt to taste.
  • Now add the rice and stir quickly. You can toss it if your wok has single pan like handle.
  • OK! So next quickly sprinkle with salt and pepper and at last just add chopped spring onions.
  • Give a hot quick stir and switch off flame.
  • Serve with hot piping rice some Chinese style gravy. Note you can add your favorite sauce while tossing.
  • You don't need to unnecessarily add msg or any artificial flavors.
  • Enjoy your rice!
