Kappa Uperi

Kappa is all time favorite of every keralites,  kappa chips, kappa with kandhari chamandhi, kappa with meen curry, kappa with beef ualathiyadh, kappa puttu, kappa biriyani, every thing... so here is another simple dish of kappa. Its just a simple stir fry which you can have with rice, kanyi or just kappa itself with hot tea.
Now for those who dont know what kappa is kappa is tapioca is a root plant. You can get this in many parts of world. You first remove the brown skin and then cut them into big pieces and then you can boil it till they are soft. When cooked nicely if the tapioca are the best ones then it will melt into your mouth. You don't need anything else with this just a little chilli chutney is the best combination of kappa.


Ingredients:

  1. Kappa boiled and made pieces  --  2 cups
  2. Onion chopped  --  1 medium or use 10 shallots chopped
  3. Green Chillies   --  3-4 chopped
  4. Whole Red Chilli  --  2
  5. Curry Leaves  --  2 twigs
  6. Turmeric Powder  --  1/2tsp
  7. Mustard Seed  --  1tsp
  8. Urad Dal  --  1 tsp
  9. Coconut Oil  --  2 tablespoon
  10. Salt to taste
Method:
  • Heat oil in a kadai.
  • When its hot add the mustard seeds and let it crackle nicely then add urad dal to it.
  • Now add the curry leaves and whole red chillies and fry for sometime. Add the onions and green chillies and fry well.
  • The onions should be nice brown colour.
  • Now add the turmeric powder and salt to taste to the onions and mix well.
  • Now add the kappa pieces and saute well.
  • Serve hot with rice.
