Vegetable Egg Omelette


Don't you like to have something special for your breakfast on Sunday after all that hectic weekdays... here's something special... an egg omelette that has vegetable in it perfect for your naughty kids that hate to have veggies... Haaaah! a hot cup of coffee goes well with this...

Ingredients:

  1. Eggs                               2
  2. Onion                             1
  3. Green Chilli                   1-2
  4. Grated Carrot               1/2 cup
  5. Grated Cabbage            1/2 cup
  6. Grated Coconut             1 tsp
  7. Coriander leaves           few strings
  8. Kasuri methi                 about 2 pinch
  9. Crushed Pepper            a pinch
  10. Oil                                1 tbsp
  11. Salt to taste.



Method:
  • Beat the eggs with salt and pepper.
  • In a fry pan add little oil and when it heats add onion, green chilli, carrots, cabbage and coconut and stir fry them nicley.
  • Now add coriander leaves and kasuri methi and stir fry again.
  • Now spread the mixture in the pan in a circle.
  • Pour the nicely beaten eggs to this mixture and prepare the omelette as usual.
  • Serve it hot with toasted bread and coffee.
