Mutta Muranga Ella Thoran (Egg and Drumstick leaves Stir Fried)

This is one of my favourite recipe. Its very simple and can be made quickly. I remember my grandma used to say if you want something special I will make it for you... and this was one of the recipe that she made within no time. We thoroughly enjoyed this recipe especially with Sambar and Rice.


Ingredients:

  1. Drum stick leaves  --  2 cups 
  2. Onions chopped  --  1 or Shallots chopped  --  8-10
  3. Green Chillies chopped  --  3-4
  4. Crushed Garlic  --  2-3 cloves
  5. Curry Leaves  --  2 stems
  6. Eggs  --  2
  7. Crushed Pepper  --  1/2 tsp
  8. Scraped Coconut  --  2tbsp
  9. Coconut Oil / Any Oil  --  1 tbsp
  10. Salt to taste

Method:
  • Clean the drumstick leaves by removing its stem and wash them thoroughly.
  • Heat some oil in a kadai, add chopped onions and green chillies, garlic and saute well.
  • Crack two eggs and add it to the onions, chillies and curry leaves .
  • Add some salt to taste at this point and then when you have scrambled the eggs add the drumstick leaves to it.
  • Stir fry the leaves and eggs nicely till they are done. Season it with crushed pepper and at last add the scraped coconut to it.
  • Give it a stir. Switch off the flame. Serve hot with Rice and Sambar.
