Egg Roast (Kerala Style)

This egg roast is very simple quick and easy to make. Freshers in cooking field and bachelors can prepare this dish and enjoy it with chapatis, puris, aappams, idiappams, or simply just bread. You can make it less spicy... but usually egg roast should be made a little spicy.
So try it and enjoy!

Ingredients:

  1. Hard Boiled Eggs  --  4
  2. Onions Sliced  --  2
  3. Green Chillies  --  2-3 sliced
  4. Crushed garlic  --  5-6 cloves
  5. Thinly sliced ginger  --  1 inch long
  6. Tomatoes  --  2 large sliced
  7. Turmeric Powder  --  1/2 tsp
  8. Chilli Powder  --  1 tsp
  9. Coriander Powder  --  1 tsp
  10. Crushed  --  Aniseed (saunf)  --  1 tsp
  11. Curry Leaves  --  few twigs
  12. Coriander Leaves  --  just a few
  13. Oil  --  2 tbsp
  14. Salt to taste

Method :

  • In a deep kadai heat some oil. Add the sliced onions and green chillies and crushed garlic and mix well.
  • Saute this till the onions are golden brown.
  • Add curry leaves, turmeric, chilli powder and coriander powder and saute again.
  • Mix nicely till the masala leaves its raw smell and its golden brown in colour.
  • Add little water so that the masala doesnt burn.
  • Add the crushed aniseed at this stage and give it a quick stir.
  • Add the sliced tomatoes and ginger into the masala and saute till the oil separates.
  • Now add salt to taste and then add the hard boiled egg and suate till the egg coats with the masala nicely.
  • Leave this for sometime and then switch off the gas.
  • Garnish with coriander leaves and serve hot.
