I was bored of daily rice and curry so thought of making some vegetable pulao with biriyani flavours and garnished with eggs. It hardly took some time to prepare this recipe. You must have tried many types of pulav's try this version I'm sure you will like it. So this weekend you don't need to think of any other recipe here is a very tasty and healthy vegetable pulav.

- Biryani Basmati Rice -- 1 big glass
- Cauliflower florest -- 1 cup
- French Beans -- cut 1 inch long 1 cup
- Carrots cut -- 1 cup 1 inch long
- Green Peas -- 1 cup
- Garlic -- 6-7 cloves
- Ginger -- 2 inch long piece
- Green Chillies -- 2
- Coriander and Mint Leaves chopped -- 1 cup
- Onions sliced and fried -- 3 onions
- Whole garam masala (cardamom, cinnamon, cloves, star anise) -- 2 each
- Turmeric Powder -- 1/2 tsp
- Chilli Powder -- 1 tsp
- Curd/Yoghurt -- 1 cup
- Cumin Seed -- 1 tsp
- Oil -- 2 tablespoon
- Ghee -- 2 tablespoon
- Salt to taste.
- Cashews and raisins for garnishing
- Eggs boiled (optional)
Method:
- Wash and soak rice for half an hour.
- Now grind ginger, garlic and green chillies.
- Now in a big bowl mix yoghurt, ginger garlic and green chillies, coriander-mint leaves, turmeric, chilli powder, 1/2 onions fried, salt and mix well.
- Now add the the chopped vegetables and mix nicely.
- Now heat oil nicely and then add whole garam masala and then add the marinated vegetables and cook well nicely.
- Now heat some ghee in a deep sauce pan and then add water sufficiently with enough salt.
- Now add rice and then let it cook.
- Once the rice is cooked drain the water and let it cool it won't stick.
- Now add the cooked vegetables to the cooked rice and keep it in low flame for just couple of times.
- Garnish with fried onions and fried cashews.
- You may garnish with boiled egg and serve hot.
