This is a super side dish for hot and soft chapatis. Gujarati's use sesame seeds to garnish in the potatoes its really tasty and has something special than usual potato stir fires. I have also added capsicum for a twist...
so try this its simple and will be ready within no time... Kids will really love this fried potatoes specially in their lunch boxes. I haven't put any extra masalas in this recipe, you can add garam masala if you like, anyways its delicious in its simple form.

Ingredients:
- Potato -- 3 large cut into cube
- Onions -- 1 chopped (optional)
- Green Chillies -- 2 sliced
- Capsicum -- 1 cubed
- Jeera -- 1 tsp
- Mustard Seeds -- 1 small tsp
- Cumin Seeds -- 1 small tsp
- Sesame seed -- 1 small tsp
- Turmeric Powder -- 1/2 tsp
- Fresh Corainder Leaves -- few twigs
- Refined Oil -- 1 tablespoon
- Salt to taste.
- Heat oil in a kadai, when its nicley hot add mustard seeds and let it crackle, and then add the cumin seeds and let those too crackle.
- Next its time to add chopped onions and saut'e till golden brown.
- Now add the green chillies and stir well. Add turmeric powder and salt to tatste.
- Now its time to add the potatoes and cook till its soft.
- Next add the capsicum cubes and cook just for a while.
- Once capsicum and potatoes are done add the white sesame seeds and then garnish with coriander leaves and serve hot with hot chapatis/rotis.
