This is a stir fry which is famous all over kerala. We mallus like some stir fry veggies with little garnish of grated coconut and some curry with hot steamed rice. This is the daily staple food of all mallus.
So here is my style of cabbage and carrot thoran.
Ingredients:
- Chopped Cabbage -- 2 cups.
- Chopped Carrots -- 1 cups.
- Chopped Onions -- 1/2 cup
- Green Chillies -- 2 sliced
- Turmeric Powder -- 1/2 tsp
- Grated Coconut -- 1/2 cup
- Mustard Seeds -- 1/2 tsp
- Urad Dal -- 1/2 tsp
- Whole Red Chilles -- 1 broken
- Coconut Oil or any other oil -- 2 tsp
- Salt to taste
Method:
- Heat oil in a kadai. Add mustard seeds and let it crackle.
- Next add the urad dal, whole red chillies and let it be brown.
- Now add the chopped onions, green chillies and saute well.
- Now you can add the cabbage, carrot and turmeric powder and saute nicely.
- Add salt to taste and minimize the flame and let the veggies cook for some more time.
- I usually do not add water to cook my veggies it. Cabbage and carrots has already got water in them so no need to add more water to it.
- Now when the veggies are done add the grated coconuts to it and just give it a quick stir.
- Serve it with rice, curry or chapatis.
