Stir Fried Elephant Yam Leaves.

Yam / Elephant Foot Yam is a vegetable found everywhere in Asia. You can prepare different kind of dishes out of the yam, but here I have used the leaves and stems of this plant. No need to say that its healthy, good for diabetic patients, good source of omega 3 and vitamin B6, good for people suffering from hyper tension so try to get the plant and prepare this recipe. Both plant and the root i.e the vegetable itself is good in all the above mentioned heath factors.

Ingredients:


  1. Elephant Foot Yam leaves and stems chopped  --  2 cups.
  2. Onions chopped  --  1 cup
  3. Green Chilli chopped  --  2
  4. Garlic crushed  --  2 cloves
  5. Grated coconut  --  1/2 cup
  6. Tumeric Powder  --  1/2 tsp
  7. Mustard Seed  --  1tsp
  8. Salt to taste
  9. Coconut Oil  --  1 tbsp.
Method:
  • Nicely clean and chop the stems and leaves of the elephant foot yam.
  • Now in a kadai heat some coconut oil you can use olive or any refined oil you like and after its heated crackle the mustard seeds. 
  • Add the onions, green chillies and saute well.
  • Add some salt and tumeric powder so that the onions will cook fast.
  • Now add the crushed garlic and the chopped leaves and stems in to the kadai and cook with the lid for sometime.
  • Nicely stir fry the leaves and stems, and add the grated coconut. Switch off the stove and serve hot with steamed rice and chapatis.
This recipe is simply superb... it tastes so lovely that any kid will also like it.
