AMMINI KOZHKATTAI

Hi! I am back this time with a very traditional South Indian breakfast. Its small rice balls steamed and then beautifully tempered with spices. You have that cute name given to it AMMINI KOZHKATTAI". Its as tasty as its name suggests and goes well with a hot cup of coffee.


Ingredients for kozhkatta:

  1. Rice flour  --  Roast it lightly to enhance the flavor and texture. 2 cups
  2. Cumin seeds  --  1/2 tsp
  3. Salt to taste
  4. Ghee  --  2 tsp
  5. Hot water  --  use boiling water about 1 cup.
Method:
  • Mix rice flour with cumin and salt nicely.
  • Next add the hot water and mix with a stapula and keep a side with closed lids.
  • Just wait for a couple of minutes and then you can knead it into a smooth dough using your hands.
  • Add the ghee to it and make a smooth dough!
  • Now you can call your huby's or sisters or your kids and ask them to help you with making small balls out of this dough.
  • Once you are ready steam it in a steamer for about 10-15 minutes.
Ingredients for tempering:
  1. Coconut oil  --  1 tsp
  2. Ghee  --  1 tsp
  3. Shallots  --  10-15 chopped finely if you dont have shallots use usual red onion just one or two.
  4. Green Chillies  --  3 slit
  5. Red Chilli whole  --  2-3 broken
  6. Mustard seeds  --  3/4 tsp
  7. Cumin seeds  --  1/2 tsp
  8. urad dal  --  1/2 tsp
  9. Curry leaves  --  few twigs
  10. Coconut grated  --  2 tablespoon.
Method:
  • Heat oil and ghee in a deep kadai and when its right hot add the mustard seeds and be patient till it crackles.
  • When the mustard seeds start to crackle add the urad dal, curry leaves, whole broken red chillies and saute till the urad dal is light brown color.
  • Next add the chopped onions/shallots and saute nicely.
  • Add green chillies and saute till the onions are nice brown color.
  • Now at last add our star ammini kozhkattas and saute well.
  • Garnish with grated coconut and cook just for couple of minutes.
  • Adjust salt accordingly.
  • Ammini Kozhkattas are ready to eat with piping hot coffee!
