Gajar ka Halwa (Carrot halwa)

This is a very traditional sweet of our country. Carrot halwa is one of my favorite dessert... We use long reddish carrots for this recipe... its available between december to march so you can buy it when the season has arrived and prepare it in large quantities and refrigerator for several days. It does take a little time to prepare this recipe but its just superb.

Ingredients:

  1. Reddish long Carrots  --  1 kg grated
  2. Milk  --  2 cups
  3. Sugar  --  2 cups
  4. Cardamom  --  4-5 crushed
  5. Mawa  --  250 gms
  6. Cashew nuts and raisins  --  1 cup
  7. Ghee  --  1 cup
Method:
  • In a deep heavy bottom kadai heat about 1 tablespoon of ghee. When the ghee is nice hot add the grated carrots to it and saute well.
  • When the raw smell of carrot has gone add the milk and mix well. Cook the carrot in low heat and saute in intervals.
  • Do check in between if the carrot has soaked in the milk nicely.
  • Add the sugar and let it dissolve completely in the carrot and milk mixture.
  • Stir the halwa continuously or else there's chance that it may burn.
  • Now add the ghee to the carrot and mix nicely.
  • Stir the halwa till the ghee leaves the pan.
  • Now add the cardamom powder and mix nicley.
  • Now the halwa must be ready it may take roughly half hour to 45 minutes.
  • Garnish with crushed mawa ,cashews and raisins.
  • Mix it and serve it hot or cold.
